Our first coffee from the La Siberia is this fantastic WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Red BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars.. Coffee has been grown on this farm since 1870, it is seated 1,450 metres above sea level in the Apaneca-Ilamatepec mountain range where the unpredictable weather and challenging terrain earned the farm its name. Today, La Siberia is in the hands of Carmen and Rafael De Silva who continue to innovate and push the farm to new heights.
