We feel the perfect espresso is an impossible goal, but we still strive to create it. Penrose is our ever-updated offering in the quest for the perfect espresso. While the seasonal components will vary throughout the year, it is always (nearly) perfect for your hopper. To learn more about the coffees and blend ratios, visit our blends page . DIAL-IN NOTES We tend to pull shots of Penrose around a 1:2 ratio at our coffee bars. These shots generally take a total of 30-35 seconds to extract, with about 6 seconds of that time in pre-infusion. We calibrate our machines to dispense water at 200 degrees.
