Tasting Notes: Brown sugar, orange, praline One of Brio's longest standing relationships is with the CESMACH coop in Chiapas. Located in the buffer zone of El Triunfo Biosphere Reserve, the member farms are dotted throughout the landscape of the Sierra Madre highlands. This ideal coffee-growing landscape yields wonderfully sweet and full-body coffees year in and year out. We're always excited when fresh crop arrives and sad to see it go when we roast the last bag! In the cup, you'll find mostly sweet and nutty notes, underpinned by a rich full body. The subtle acidity is reminiscent of fresh oranges, lending complexity to the overall cup. This coffee is well-suited to both drip and espresso preparations. A further note about the El Triunfo Reserve; this is one of the most diverse forest reserves in the world and contains Meso-America's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. To help manage the buffer to adjacent population centers, all of the coffee produced here is shade-grown and organic. Learn more about CESMACH from our friends and importing partner, Cafe Imports.
