Meet Decaf La Fortaleza, pronounced “For-tuh-lay-zuh,” a triple-certified Honduran coffee from our longtime partners at COMSA. After years of working with COMSA, we had the opportunity to send one of their Organic, Fairtrade, and Smithsonian Bird Friendly® coffees to Swiss WaterSugarcane (EA) decafDecaffeination using ethyl acetate derived from fermented sugarcane, common in Colombia. Keeps sweetness well; often labeled 'EA' or 'sugarcane process'.® for decaffeination. The result is a beautifully expressive decaf that has more than just decaf drinkers excited. “La Fortaleza,” meaning “The Fortress,” is the name of COMSA’s biodynamic farm and learning center, where they explore what thoughtful, regenerative coffee farming can accomplish. Through practices like soil chromatography, mushroom cultivation, and the creation of organic growing inputs, La Fortaleza serves as a place of creativity, innovation, and deeper connection to the land.
