Roasters buy green and roast locally; 'green buying' is the sourcing side of the craft.. We anticipate receiving the new crop by the end of the month. Impacted coffees include Tzeltal-Tzotzil , Montes Azules , and Logan Canyon BlendBlendCoffees from multiple origins roasted or mixed together for a consistent, balanced profile year-round — the traditional backbone of espresso menus. , which includes Mexico as a significant portion of the blend. In the meantime, here are a few recommended alternatives: For Tzeltal-Tzotzil drinkers, we recommend Chajulense as the closest match in roast level, region, and sensory profile. COMSA , Brazil , and Guatemalan Forest are also great options, with Brazil offering a familiar nuttiness and Guatemalan Forest bringing a slightly different but worthwhile direction. For Montes Azules drinkers, we recommend Flycatcher and Guatemala Dark as strong alternatives. For those looking for a bit more depth or complexity, Colombia Huila Dark and Bali Kintamani are also excellent options to consider.
