Tasting notes
This release comes from Gerardo Cáceres, a producer working at Finca Colombia in El Salvador. His farm sits in a region known for producing some of the country’s most expressive coffees, and over time, Gerardo has focused his work on cultivating varieties that reflect both the potential of the land and his own attention to detail. Finca Colombia is shaped by steady refinement, where each harvest builds on the last and quality is the result of consistency and care. Gerardo selectively picks ripe cherries and dries them slowly, allowing the fruit to develop while maintaining structure in the cup. When done well, this process creates something vivid and layered without losing balance. There is a clarity to the profile that feels both delicate and expressive, something that continues to evolve as the coffee cools. It is a combination of variety, process, and environment coming together in a way that feels intentional at every step. As part of our Exotic Select series, this coffee represents the kind of work that pushes quality forward. It is a reflection of Gerardo’s approach to farming and processing, and of the care required to bring out the full potential of a coffee like this.
