After being hand-picked in the morning, only the perfectly ripe GeishaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. cherries were selected and pulped in the afternoon before undergoing a 48-hour fermentation in open-air tanks.
