This one's a really interesting and unusual naturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. processed Paraiso varietal from Marcelo Assis in Brazil. Marcelo and his team are really pushing the boundaries for specialty coffee production in Brazil, and they even won 1st place at the 2024 Cup Of ExcellenceCup of Excellence (COE)A national competition and auction that identifies a country's best lots each year; winning 'COE' lots command dramatic price premiums. awards for one of their experimental process lots. There's a lot going on in this particular natural lot, with orange and peach notes throughout (maybe even a touch of peach wine), plenty of lime like acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and some hints of mint on the finish. Lots to unpack and enjoy, and a great chance to experience a fairly uncommon varietal.
