A double release in the Competition category from Gonzalo Hernandez at Coffea Diversa! This time around, we have Ghimbi and GeishaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction.! We commisioned both of these as one of our favorite processing methods, hybrid washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly.! The process is quite simple; the cherries are fermented in aerobic tanks for 24 to 48 hours or until the cherry is ‘soft’. The coffee is pulped and then dried in stages to achieve an extremely stable end product. Coffea Diversa is a statement of what our competition category is all about – some of the most exotic varieties with masterful craftsmanship.
