Nestled in the cloud-covered mountains of San Pedro El Alto in Oaxaca, Finca La Primavera thrives as a true representation of coffee heritage. Praxedez Lopez and his wife, Luciana Cruz, are at the helm of this farm. Praxedez's journey into coffee began with his parents, who imparted their wisdom and expertise in the field. He is grateful for their guidance and continues their legacy with dedication. Praxedez has been intensely involved with coffee for the past decade and joined Caravela's esteemed production chain 3 years ago. During that time, he gained knowledge of quality and found Caravela's technical support valuable in improving his coffees - a level of support he had not experienced elsewhere. Praxedez harvests selectively and performs dry fermentation (without water) for an average of 36 hours. This is followed by careful drying on concrete patios for over 6 days to produce exceptional coffees. On the farm, he grows only the TypicaTypicaThe oldest cultivated arabica lineage, ancestor of most Latin American coffee. Low yield, clean and sweet cup; the baseline other varieties are measured against. varietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. A major driver of cup character alongside origin and process. which he is enormously proud of for its profile and the recognition it has earned him. In the future, Praxedez would like to see higher productivity and even better quality, combined with a gradual renewal of these plantations.
