Tasting notes
Our rally cry for balancing the familiar with the best of all possible worlds. A shot across the bow of complacency and made to spark creativity, conversation and comeback stories. Notes of ripe pinot grape and dried dates squabble with fresh raspberry and wild honeycomb to conclude in hazelnut or chocolate. This is wild balance and tastes just like you always imagined. WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Colombia Huila Pitalito & Washed Honduras Corquín Copán & NaturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. Nicaragua Jinotega La Bastilla.
