In the northern reaches of the country is the region of Nueva Segovia, bordering Honduras with high mountains ideal for coffee production. It is here, in the community of La Laguna in Dipilto where Janaina and Jaime maintain their farm. Their family has been running this farm for over 70 years and it was named after Saint Isabel. The farm is broken up into lots based on area and altitude. This specific lot is called La Parainema, since that is the varietal grown in this area. Think of brightness in the cup with tangy lemonade and herbal iced tea, sweetened with earthy coconut sugar.
