I love Colombian coffees, I really do. When it all aligns, a great Colombian might just be my favourite coffee to drink. It can have the acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. of a Kenyan, the floral of an Ethiopian and the sweetness and roundness of the best Guatemalans. This coffee is a good example of that, it has it all! This is a single daylot from his August harvest that I hand picked to be part of our Spotlight series. It’s solid and represents the very best of double fermented pink bourbons. This omniroast has been optimized for filter, but a well trained barista will definitely be able to pull tasty shots with it.
