Produces intense, unusual flavors — cinnamon, bubblegum, boozy fruit — that divide opinion. (CM). For the CM method coffee cherries are fermented in sealed tanks before being dried on raised beds. This creates a very fruit-forward coffee with notes of tropical fruits.
