Long dismissed by purists, it now wins competitions when grown and processed well. Process: WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Notes: Pineapple, mango, floral, & juicyAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. About: El Paraiso is a small farm at only 6 hectares but Diego is about producing coffees of distinguished quality over volume. At El Paraiso he grows BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars., Castillo, and GeshaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. varietals, and carries out processing experiments to bring out new and interesting flavour profiles in the coffees. Diego hopes that in the near future, through research and innovation, coffee will become a positive income source for all the families in his community.
