Descriptive associations, not ingredients: nothing is added to the coffee.: Strawberry, ripe cherries, silky & creamy bodyBodyThe weight and texture of coffee in the mouth, from tea-like and delicate to syrupy and heavy. Driven by process, roast, variety, and brew method. Region: Yirgacheffee, Gedeo Varietal: Ethiopian HeirloomHeirloom (Ethiopia)A catch-all label for Ethiopia's thousands of indigenous, largely uncatalogued coffee varieties — used when a lot's exact genetics are unknown. Process: NaturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. Altitude: 1750-1950 masl Recipes: Espresso: 1:2.5 | Filter: 1:17 Developed by exporter and producer partner Abdullah Bagersh, the ‘Guji’ Misty Valley is produced with an incredible amount of care from start to finish. This Heirloom varietal hails from the Yirgacheffe, Gedeo region. Only the ripe cherries are meticulously handpicked. At the mill they are placed on raised African drying beds, and are constantly turned (day and night) for the first 48 hours of drying. This ensures an even evaporation of the moisture from the cherry - to deliver consistency and cleanliness to the cup. After the coffee is fully dried and the skin, mucilage, and parchment removed and the coffee is sorted
