At Mitawa’s Central Processing Station, farmers from the surrounding villages deliver cherries in the afternoons and early evenings, with the pulper running late into the night. After the coffee is sorted and graded, it dries on raised beds for 14 to 21 days, as the area is slightly more humid. Mitawa is a complex and bright coffee with notes of peach, gingerbread, and black tea.
