Jose Ignacio Cubillos is a passionate coffee grower from Santa Maria, Huila, whose life revolves around his farm, Praderita. Located in the Canan district, at an altitude of 1850 to 1900 meters, Praerita has been his home and project for the past 20 years since he inherited it from his family. Over the years, Jose Ignacio has worked tirelessly to preserve and improve the quality of the coffee grown on his 3.5 hectares. On his farm, Jose Ignacio has chosen to cultivate varieties like BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars. Rosado and CaturraCaturraA natural dwarf mutation of Bourbon found in Brazil: compact plants, easier picking, bright and clean cup. A workhorse across Latin America., which thrive in the unique climate and altitude conditions of Santa Maria. These beans benefit from a meticulous process that begins with 12 hours of oxidation in cherry followed by another 30 hours in mucilage. They are then carefully dried in drying tents, ensuring the beans reach optimal moisture levels and retain their full flavour.
