This well-balanced expression of Pacas is bright, with articulated acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and notes of apricot and plum.
