The first tasting a few hours after roasting gives us the following notes : When hot : very sweet, oolong, floral like rose and violette When warm : more juicyAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. but stays rose and violette. Also has notes of citrus. When cold : rose and violette jam. Subtle.
