Juanachute was one of the first anaerobicAnaerobic fermentationCherries or depulped seeds ferment in sealed, oxygen-free tanks. Produces intense, unusual flavors — cinnamon, bubblegum, boozy fruit — that divide opinion. coffees that caught our attention. Producer Tacho Castro helped pioneer the 'micromill' approach in Costa Rica, delivering incredible flavour through continual experimentation.
