We’re launching this series to celebrate our Head Roaster Dan Fox’s origin visit to Aracaçu this month. Dan has just returned from spending time at the farm, meeting the people behind these coffees and seeing first-hand how each lot is grown, harvested, processed and cared for at origin. Although all three coffees have been processed using the same method, each lot comes from a different area of the farm and a different coffee variety. This creates three distinct cup profiles, showing how variety, elevation and microclimate can shape flavour, even within the same farm and processing approach. Aracaçu sits alongside its sister farm Caxambu in Três Pontas, Minas Gerais, and is led by Carmem Lucia, known as Ucha. Recognised by Forbes as one of the 20 most powerful women in agribusiness, Ucha has been a driving force in Brazilian coffee for years, combining innovation, sustainability and a deep commitment to quality. The farm is fully solar powered, saving 65 tonnes of carbon since its installation in 2024. Recent developments include cherry colour sorting, which creates more uniform selections for fermentation and drying, alongside AI-supported grading to improve consistency and quality control. Ucha and her team also take a research-led approach to the land itself. A full-time biologist studies the farm’s microbiome, while a bee project brings more than 3,000,000 bees to the farm during flowering, supporting flower health, increasing sugars in the bean and working with local beekeepers. With 27% of the farm preserved as natural habitat, Aracaçu is home to a wide range of wildlife, from toucans, parakeets and canaries to capybara, deer, anteaters,
