Steps

  1. Valve OPEN: pour 60 g at 90 °C, percolation bloom

  2. Valve OPEN: pour to 120 g, let it draw down

  3. Valve CLOSED: pour remaining water at ~70 °C (cooler water = sweetness, less bitterness)

    280 g(+160 g)
  4. Valve OPEN: full drawdown, swirl once

  5. Done — clean cup with immersion sweetness
