Descriptive associations, not ingredients: nothing is added to the coffee. brown sugar, chocolate, almond, orange COFFEE BACKGROUND This lot comes from the communities surrounding Jaén, the main city of Peru’s Cajamarca region. The rich volcanic soil, high elevation, and steady tropical rainfall provide ideal conditions to produce specialty coffees. Our sourcing partner Falcon works closely with farmers to help realize this potential, empowering them through technical support and accessible infrastructure. During harvest season, producers use hand-pulping machines and fermentation tanks to process coffee cherries right on their farms; the seeds dry on patios or raised beds. Farmers deliver their coffee in parchment to Falcon’s Jaén warehouse, where buyers weigh, grade, cup, and pay for the lot within a day. This real-time feedback loop — and the on-the-ground support of Falcon’s agronomists — allows producers to continually improve their practices, and in turn, coffee quality.
