Most of the world's coffee is grown this way, typically pooled at cooperatives or washing stations. farms surrounding São Bartolomeu. Grown at higher elevations and dried on patios at each individual farm, it carries more structure and complexity than the heavy, flat dark roasts people often expect from Brazil.
