CSC Slow Dry NaturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. Our newest Best of Ibis offering, CSC Slow Dry Natural, is a rare and expressive natural-process coffee from Aceh, the northernmost province of Sumatra, Indonesia. This coffee comes to us through Central Sumatera Coffee, an exporting group based in the Bener Meriah Regency of Aceh. During a recent trip to Sumatra, our Director of Coffee and GM, Tom Wilson, tasted this coffee on the cuppingCuppingThe standardized tasting ritual — coarse grounds steeped in hot water, crust broken, slurped from a spoon — used to score and compare coffees. table and was immediately drawn to its quality, uniqueness, and beautifully layered cup profile. Natural processing is uncommon in Sumatra, where the humid, overcast climate makes drying coffee especially challenging. While the region is best known for wet-hulledWet-hulledIndonesian method (giling basah) where parchment is stripped while the seed is still wet, then dried bare. Gives the earthy, spicy, heavy-bodied profile classic to Sumatra. coffees, this lot takes a different path. The coffee cherry is left on the seed and slowly dried for 27 days, more than six times longer than a typical wet-hulled process. Grown and picked at 1,800 meters, this coffee reflects both careful farming and patient processing. We roast CSC Slow Dry Natural light to preserve its delicate sweetness and silky structure. In the cup, it opens with a syrupy lychee note, floral, fruity, and slightly tropical. A soft, aromatic sweetness reminiscent of sticky rice follows, leading into a long, full-bodied finish with a gentle vanilla-like quality that brings whipped cream to mind.
