El Sauce, Santa Barbara | Pacas | 1490 masl | WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Sweet, complex, and fruit forward, this washed Pacas from Santa Barbara opens with red grape and hibiscus and settles into refined sugar and maple. Alexis Pineda farms in the community of El Sauce, where his father and grandfather taught him coffee from the ground up. When his father eventually handed over a plot that had been in conventional production, Alexis was already thinking differently. Conversations with friends had sparked his interest in specialty, and he set about tightening his cherry selection and refining his processing. This 100% Pacas lot is what those efforts look like in the cup. Santa Barbara is a region we keep returning to, and this coffee is made possible by our longstanding relationship with the celebrated San Vicente mill.
