We've spent nearly a decade growing alongside Damian Chavez and his family, since he was just beginning his coffee journey. This release marks our first BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars. processed with his anaerobic washedAnaerobic fermentationCherries or depulped seeds ferment in sealed, oxygen-free tanks.
