Continuing our Honduran offerings this season we have a lovely coffee produced by Carlos Damian. This fully washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. selection of pacas was grown on his Bella Vista farm on the eastern side of Santa Bárbara Mountain facing Lake Yojoa. This is a balanced, comforting coffee that we've been looking forward to for months. Presenting beautifully as either filter coffee or espresso, we're tasting milk chocolate, toffee, and almond with a subtle, structured acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. reminding us of peach, apple, and grape. We have a limited amount of this coffee and it's our delight to share it with you.
