Decaffeinated coffees are getting a lot of attention currently and for good reason. We are excited to see the awareness and passion for high quality decaffeinated coffees rise and to also see the innovative nature of specialty coffee begin to include more and more incredible decaffeinated options. We believe we have a truly delicious standard decaf coffee offering from the Huila region of Colombia, but we wanted to offer our customers something different and exciting. Something that will truly compete with any conventional coffee on flavor and performance in the cup. This naturally processed lot comes from Somalia Guerra Fonseca, who tends her 12-hectare farm, Villa Kelly, in the Magdalena region of Colombia. With more than 20 years of experience, Somalia works alongside her children Kevin, Kelly, and Gabriela to cultivate Castillo and Colombia varieties at 1,541 meters above sea level. Farming is a full family effort, and her commitment to sustainability shows in the way she preserves water, protects the surrounding environment, and works to build a future where her children can continue the legacy. Before decaffeination, the cherries undergo a careful fermentation process in small anaerobic tanks, followed by slow drying on sun and shade-covered beds over several weeks. Each lot is tracked closely from harvest through drying to ensure clarity and stability in the cup. Once the coffee reaches its ideal moisture level, it is gently decaffeinated using high-mountain spring water and naturally derived ethyl acetate from sugarcane. This process removes caffeine while maintaining the bean’s structure and flavor integrity, without the use of synthetic chemicals.
