This coffee is the Parainema varietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. A major driver of cup character alongside origin and process., a cross between Villas Sarchi and Catimor, making it an easier coffee for farmers to grow while still boasting an intense cup quality. Giovanny has done incredible job with the honey process, mellowing out the intensity and increasing the sweetness of this variety.
