White Peach • Floral • Grape We have partnered with Jorge Rojas and his family’s farm, El Jardín, for seven years , but this harvest marks our first time purchasing his Caturra Chiroso. Genetically traced back to Ethiopian landrace varieties rather than traditional Colombian lineages, this unique cultivar produces dense seeds with a distinctly floral, tea-like profile. Jorge highlights these delicate genetics through a meticulous fermentation process, carefully monitoring the environment in sealed barrels so temperatures never exceed 23°C . This slow, cool method, followed by a stabilized week-long drying phase , naturally develops a crisp acidity while locking in the coffee's aromatic clarity.
