Berdugo is deeply committed to improving his practices—he has participated in training programs with SENA and earned Rainforest certification through a local association, where he also served as director and vice president. This lot underwent a meticulous bio-innovation washed process: cherries were fermented in anaerobicAnaerobic fermentationCherries or depulped seeds ferment in sealed, oxygen-free tanks. Produces intense, unusual flavors — cinnamon, bubblegum, boozy fruit — that divide opinion. conditions for 98 hours, then oxidized in aerobic multicage tanks for 34.5 hours. After washing, the coffee was mechanically dried for 18.5 hours, followed by an extended 820-hour patio drying phase, allowing for slow, even moisture release.
