His 5-hectare farm, San Isidro , sits at 1,616 meters above sea level, where he grows exceptional Pink Bourbon. Berdugo is deeply committed to improving his practices—he has participated in training programs with SENA and earned Rainforest certification through a local association, where he also served as director and vice president. This lot underwent a meticulous bio-innovation washed process: cherries were fermented in anaerobic conditions for 98 hours, then oxidized in aerobic multicage tanks for 34.5 hours. After washing, the coffee was mechanically dried for 18.5 hours, followed by an extended 820-hour patio drying phase, allowing for slow, even moisture release. The result is a cup that highlights the vibrant, complex profile of Pink Bourbon with layered acidity, sweetness, and depth—a reflection of both Berdugo’s dedication and the innovative processing behind it.
