A major driver of cup character alongside origin and process.. Gabriel Castaño is the GodFather of Pink Bourbon. It was at his farm 'La Granada' in Acevedo, Huila that the variety was first found. Gabriel generously then shared them with other producers all over Southern Huila, and now the world. This decaffeinated Pink Bourbon is processed with the same care as which it was grown. The caffeine is removed by gently steaming the coffee seeds, followed by repeated bathing in a naturally derived solvent made from sugar cane and local fruits.
