Papayo is a rare and intriguing variety of coffee only recently appearing in the department of Huila, Colombia. The name "papayo" refers to its appearance, bearing clusters of oblong fruit that resemble tiny papayas. This lot, produced by Rubén Correa, is a great example of why papayo the variety caught our attention. The coffee it produces is incredibly sweet and fragrant, with flavors that remind us of black cherry, kiwi, chocolate graham cracker, assam tea, and subtle tropical fruit—think pineapple, mango, and yes, papaya.
