We love the resonant red fruit flavors in this coffee - the cherry and jammy strawberry stand out, along with a bit of honeyHoney processThe skin is removed but some sticky fruit mucilage is left on during drying. Lands between washed and natural: more sweetness and body than washed, cleaner than natural. backing them up. And the acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. is balanced, helping to define the fruit flavors while remaining absolutely chuggable. Linarco has five farms, with this lot coming from his Finca Betania. After 48-hours of anaerobic fermentationAnaerobic fermentationCherries or depulped seeds ferment in sealed, oxygen-free tanks. Both Linarco's mother and sisters are involved in the operation, which all started with his grandparents. Finca Betania is 42 hectares, and five of them are conserved as native forest.
