Colombia — Linarco Rodriguez CastilloCastilloColombia's leaf-rust-resistant variety, bred by Cenicafé from Caturra and Timor hybrid. Long dismissed by purists, it now wins competitions when grown and processed well. This lot comes from producers across Huila, which are brought to Linarco’s farm for processing. The cherries are fermented between 14–22 °C for around 72 hours, before being pulped and left to oxidise for 48 hours. The result is a beautifully structured washedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. profile. Sweetness and fruit clarity are complemented by a gentle creaminess and a lingering, balanced finish.
