Region: Huila Elevation: 1800 masl VarietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. A major driver of cup character alongside origin and process.: CaturraCaturraA natural dwarf mutation of Bourbon found in Brazil: compact plants, easier picking, bright and clean cup. A workhorse across Latin America. Process: WashedWashed processThe fruit is removed from the seed before drying, usually with fermentation and a water rinse. Tends to give clean, transparent cups where origin character shows clearly. Notes: Brown sugar, peach, vanilla, & juicyAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. About: Mauricio Botina (the brother of the well-known Miguel Botina) is an accomplished coffee producer in his own right. Apart from managing his two farms, Los Lagos and La Foresta, he is also a certified Q grader, Q processing professional, and the director of quality control at the Colors of Nature research centre and mill. Mauricio is passionate about good coffee and has travelled around Colombia and Costa Rica educating producers on how to make theirs tastier. When he isn’t deep in coffee Mauricio is farming fish, which he sells in the town as an alternative income stream for his family.
