Farm: Various Producer: Silva Family Region: Santa Ana & Ahuchapan Elevation: 1450 - 1720 masl Varietal: BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars. Process: NaturalNatural processThe whole cherry is dried with the fruit still on the seed. Gives heavier body and big fruit flavors — think berries and wine — sometimes with a fermenty edge. Notes: HoneyHoney processThe skin is removed but some sticky fruit mucilage is left on during drying. Lands between washed and natural: more sweetness and body than washed, cleaner than natural., caramel, & milk chocolate About: In 2018 we instigated a natural processing experiment at Si Café to create a coffee with flavours of chocolate and deep purple fruits. It was a great success and for 2019 we have it back again! This is the go-to coffee that is sure to leave any person satisfied with a big smile. It’s like a big warm hug. This 100% Bourbon lot has been developed for espresso and you won’t find it anywhere else.
