It is shrouded in mist for most of the day, creating a unique microclimate for growing coffee. Made famous as the place where the super rare Bernardina varietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine. The highest tablon on the farm is named ‘Gato Cervantes', after the Civet cats native to the area. On this high misty tablon, the Pacas family grow Bernardina and Red BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars.. This coffee was fermented in a sealed vat for 48 hours and then underwater for 24 hours before being slowly dried. Farm manager, Ruperto Bernardino Merche, believes there's a special type of magic at Los Bellotos, which is why the coffees are so special. This coffee is wild and tropical, with a marzipan sweetness.
