Finca Los Bellotos is a magical place, perched high up in the mountains close to the Santa Ana Volcano and overlooking the picture-perfect Lake Coatepeque . Work at Los Bellotos starts very early in the morning, to account for the thick blanket of fog that often shrouds the farm later in the day. In addition to an early start for the workers, the dense fog also creates a unique microclimate for growing coffee , where the temperature is consistently cool throughout the day, and is one factor that makes coffee from Los Bellotos so special. The other factor is farm manager, Ruperto Merche , who also happened to discover the Bernardina varietyVariety (cultivar)The botanical subtype of the coffee plant — Gesha, Bourbon, SL28 — analogous to grape varieties in wine.
