Altitude: 1660 – 1800 masl About: Bam bi t o E s t a t e has been passed down through five generations of the Amar Sittón family. The patriarch of the family, Alberto Sittón Ríos, acquired the farm from his father in 1945 and it remained his lifelong passion. Today, Bam bi t o E s t a t e is run by Priscilla, her brother Rafael, and her son Ivan . Located high up in the cloudy forests of Volcan Baru, Bam bi t o E s t a t e is nestled between two national parks and is intersected by two mountain ridges running from east to west, creating two distinct microclimates for coffee cultivation. This unique setting produces GeishaGesha (Geisha)A rare, jasmine-and-bergamot scented variety originally from Ethiopia's Gesha forest, made famous by Panama's Hacienda La Esmeralda. Routinely the most expensive coffee at auction. that few places on Earth can match, boasting a clear sparkling acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it. and strongly perfumed florals. We have had the privilege of knowing the Amar Sittón family since our first trip to Panama in 2010. At that time, they weren't producing enough Geisha to sell, but we recognized they had something truly special. Since their first exportable harvest in 2013, we have been purchasing Geisha coffee from Bam bi t o E s t a t e , and it consistently remains one of our favorites each year.
