This lot comes from Buesaco, located at 1950 m.a.s.l in the department of Nariño. This region is characterized by its mountainous topography and its cold climate is perfect for slow cherry maturation that leads to a sweeter and more complex cup. Coffees from Buesaco are harvested from May to August. This is the best time because this region doesn't experience heavy rains as in other parts of the country making the processing much easier. Cofinet works with farmers through their partners at cooperatives such as Alianza Café and Terra. This delicious regional blendBlendCoffees from multiple origins roasted or mixed together for a consistent, balanced profile year-round — the traditional backbone of espresso menus. is produced by a collection of smallholdersSmallholderA farmer growing coffee on a small family plot — often under two hectares. Most of the world's coffee is grown this way, typically pooled at cooperatives or washing stations.. Recommendation: RestingRoast date / restingSpecialty bags carry the roast date, not a best-before. Coffee needs days to degas CO₂ after roasting ('resting') and is typically best within weeks, not months. time: 2-3 weeks Filter Brew: 1:16-17, 94c Espresso: 1:2.2-2.4, 94c, 30s
