Tarqui is a newer region of Huila for us to be working in, and we're excited to be sharing our exploration with you. This selection is illustrative of the effects longer fermentation times can have on flavor profile. In the cup we find a very sweet and more fruit forward profile of grape and berries, a subtle citrus acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it., and a delicate florality.
