Yabitu Koba continues to be one of our favorite coffees to work with year after year. This lot is an exquisite representation of Uraga, coming from staggeringly high elevations in the Guji highlands. It is a complex cup, layered with ripe watermelon, singing acidityAcidityThe bright, lively, fruit-like sensation in coffee — praise, not a flaw. Citric sparkle, malic apple-crispness, tartaric wine notes; light roasts preserve more of it., and jasmine-like florals.
