Tends to give clean, transparent cups where origin character shows clearly. High in the mountains of Northern Peru, the Paric community is home to a group of dedicated coffee producers connected through the Rutas del Inca Cooperative. During our visit to Paric in September 2025, we shared meals, stories, and conversations with the farmers whose commitment to quality is evident in every cup. Their deep connection to both the land and one another reflects the collaborative spirit that makes this coffee so special. This lot is sourced exclusively from coffees grown above 2,200 meters in elevation, where cooler temperatures and a longer maturation period allow exceptional sweetness and complexity to develop within the cherry. Carefully harvested, washed, and dried by producers before being delivered to the cooperative, the coffee showcases the unique character of Paric's high-altitude terroirTerroirBorrowed from wine: the way a place — soil, altitude, climate, even neighboring crops — expresses itself in the cup, independent of variety and process.. The result is a comforting and beautifully layered cup with notes of dried apricot, vanilla bean, caramel, buttered scone, and sugared apple. Gentle acidity and a smooth, rounded sweetness create a coffee that is both elegant and approachable.
