Whole beans from the Finca Deborah from Boquete in Panama. It is an extended natural processed geisha. Jamison Savage, the producer named the process Umbra. A few hours after roasting, Joachim wrote the following notes about this coffee : When hot, it exotic fruits like mango, passionfruit When warm, still the exotic fruits with hints of strawberry. It is a super clean cup and very sweet as well ! When cold, the coffee remains mango and tastes also papaya and persimmon. Not over fermented at all. The cherries dry over 35+ days period. This additional time in cooler temperature allows the grain to absorb more of the essence and character provided by the fruit. In 2017, 2024 and 2026, we visited Finca Deborah, the farm of Jamison Savage, located in Chiriqui, Panama. When you see the coffee trees in the forest, the care taken to pick the cherries, to process the beans, you understand why these coffees are so amazing and pure.
