Jorge Portillo learned the art of farming from his father and grandfather in the 1990s. Around 7 years ago he banded with his brothers to plant a new farm, Finca Las Rocas. There he grows Pacas, BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion). Sweet, balanced, caramel-leaning; parent of countless modern cultivars., and Parainema varieties. A major driver of cup character alongside origin and process., a unique flavor profile coffee that is rust resistant and has characteristically large beans. This means that the variety is good for growers and consumers alike. Finca Las Rocas is located on the Santa Barbara mountain in the village of El Cielito where hundreds of farmers grow alongside Portillo.
