The traditional European style of dark coffee is still loved across much of the world, and Eclipse is our tribute to it: roasted just past peak sweetness to curb acidity, with a long development that builds heavy body and deeply toasted sugars. The current crop is a washed Caturra from Colombia. The origin shifts with the seasons, but the brief never changes: we blind-cup through hundreds of Latin American lots and choose only the ones that can stand up to a heavy roast while holding on to sweetness. The result is the dark, syrupy cup you remember from late nights abroad, made to pair beautifully with milk as both filter and espresso.
