The result is an unusual, memorable cup: ripe crushed grapefruit, tart green grape and a steeped black-tea quality that ties it all together. Abraham Armijos is a young producer who began growing coffee in 2022. He farms just one hectare of coffee alongside fruit trees in the highlands of Loja. After hand-selecting only ripe cherry, the depulped cherry rests in tanks for around 24 hours, then moves through a washing and soaking step before drying under a covered greenhouse for up to 17 days. The variety, Typica Mejorado, is an Ecuadorian hybrid of BourbonBourbonOne of the two foundational arabica varieties (with Typica), named after Île Bourbon (Réunion).
